Mission: Cooking 1 お好み焼き
This is the first cooking mission to M.
The idea is simple. M is supposed to cook according to the instruction given my m, and report back on this blog.
So おこのみやき, or a slightly modified version of it.
Ingredients:
Cabbage (I took approx 1/6 of the size of Vitkål vi har hemma)
Spring onion.
My modification from original.
Carrot to be healthy (1/3)
Onion instead of spring onion (1/2).
In any case, major % should be cabbage. I used much more cabbage than on the pic.
Batter:
1 dl 'Light '(low glutein) flour
0.8dl japanese dashi
20g grated Yamaimo (or substitute).
I used:
-all purpose flour
-water + some dashi powder (maybe 1/2 kryddmått)
-A small potato instead of the slimy vegetable "yamaimo"
M> you can try to use one "Taro" instead of potato if avaible.
I used food processor to cut up everything. If you cut manually, don't make it too big, nor to tiny. Maybe 5mm x 1-1.5cm pieces are good for cabbage.
Here are some other ingredients than can go in to make it taste "better".
- Tenkasu: The crispy batter from tempura. Replace with anything crispy, tasteless and fluffy. I took popcorn. Maybe 10-15 of them, crushed.
- Ginger: You are supposed to use red picked ginger (not pink one from sushi places), but I took standard fresh ginger. maybe 1cm put into small pieces
- Chives.
This is pretty essential for "Buta dama".
Sliced pork meat. I used sidfläsk, but you can use bacon.Cut into small pieces to mix into the batter + few bigger one as topping.

Add 1 egg per person. Since you can't eat egg, add someting to the mix get a bit stickier (more flour?)
Mix mix. Don't overmix. You don't want to "deveop gluten threads". The mix should look like if you had too much vegetables.
Fry fry....This is pretty difficult. I usually fail here. Should fry long enough to make the batter hard enough strong for flipping, but not burn it. I used strengh "6", and had lid. It's better to wait too long than too short. It will break apart.
Topping.
- Okonomi sause
- Mayo
- Katsuo bushi
- Aonori
Okonomi sause might be difficult to get...I've discovered how curry + ketchup taste amazingly close to Okonomi sause, but the colour is crap. You could experiment with ketchup, curry and worchester sause.
