Mission Report: Cooking 7, Rotsaker med Bravas , South Africa
This was an extreamly challenging Mission!
Not so much for the recepie it self. It was pretty straigth forward. But it contained some ingrediants that I did not have and that I did not want to buy!
The Taro (Satoimo) and Sweet Potato (Satsumaimo) was no problem. Those I had already in the fridge.
I choose however only to take 2 Taros but 1 whole Sweet Potato. The reason was that the Taros I had was very big and the Sweet potato very small.
The ingrediants problems came for the Bravas Sause......
Garlic, onion, tomato and salt was no problem. Had them all. The issue was with the paprica powder, vinegar, tabasco and olive oil. Had none of those and did not want to buy them since I am only in South Africa temporarly.
I had to find alternative!
I replaced the paprica powder with some fresh minthe leaves, the vinegar with freshly squezed lemon juice, the tabasco with periperi sause and the olive oil with sunflower oil.
I choose to be healthy and baked the taros and sweet potato in the oven instead of deep frying them in oil.I had them in for about 30 min in 200 degrees. They turned out very good!
When I did the sause I also faced another challange. The original recepie calls for running it through a mixer. I has no access to such a device in Africa. I had to use a potato crusher instead...... It was not so succesful..... The chopped onion kept its size...
The final result looked like this:
The Sause tasted surprizingly good despite the changes of ingrediants and the baked vegtables were also exellent!
